| red wine vinegar | sharp, sweet and full bodied vinegar. Compliments tart, strong greens |
| white wine vinegar | sweet and clean tasting vinegar. Compliments mild greens |
| champagne vinegar | mellow and delicate vinegar. Use in fruit vinegars and light dressings |
| cider vinegar | naturally sweet vinegar made from apple juice. A yeast is added to convert sugar to alcohol |
