Characteristics of Muscat
- low - medium acid, perfumed aromas of orange blossom, rose, grape
- thrives in warm-hot climates, benefits from cooling influences that help raise acidity
Youthful, Unaged Muscats
- medium gold in colour, floral, aromatic
- sweet but rarely luscious
- grapes picked ripe and healthy
- crushed, sometime a short pre-fermentation soak as the skins add aromatic intensity
- sometimes skins included in the fermentation for further aromatic intensity
- fortification with 96% grape spirit to stop the fermentation
- inert vessels used to preserve the primary fruit character

- generally blended with younger muscat before bottling
