Northern, Eastern, (these two high volume, inexpensive, due to Mendoza river providing irrigation)
Central - longest history, most famous. Luján de Cuyo is tops for Malbec, also Maipú for Syrah and Cab Sav;
Uco Valley - south west. High quality. Cool nights to retain acidity and freshness. Some sites cool enough for Pinot Noir, like Tupungato. Most wines are Chardonnay, Torrontés, Sav B, Malbec, Cab Sav, Merlot, Tempranillo
Southern - San Rafael department. Low altitude, but given how far south it is one of coolest regions. Chenin Blanc here.
