Describe the Malting process: 3 basic steps

Malting Process: describe steeping
The barley is soaked in water 3 times over the course of 2-3 days. The barley is constantly aerated to ensure consistent absorption and avoid clumping. The moisture content of the barley must be raised to 46% for the enzymes to be activated to trigger germination.
Malting Process: describe germinating
During this process the enzymes released from steeping (cytase) begin to break down the walls of the endosperm (store of starch for the embryo to feed on). The embryo taps into the starch and begins to grow roots. The barley is turned by hand on a traditional malting floor or in Rotary Drums and Steep, Germinate and kilning Vessels (SGKVs) in modern malting houses to prevent the roots from getting entangled and to maintain a constant moisture/temperature level
Malting Process: describe kilning
The process of drying the barley after germination to halt the growth of the plant and preserve the starch in the grain so the starch can be converted to sugar in the mashing process by the enzyme amylase/diastase. Dry heat, smoky heat, or peat heat is used to alter the flavor profile of the malt.

After malting the barley is screen to remove any smaller grains that have not absorbed enough water and are stored in the malt bin

After the barley is screened it is moved to the dressing machine, to remove shoots and rootlets,
Describe the milling process
Once dressed the barley is moved to the milling machine. Here rollers crack the husks and grind the malt. The resulting grist then moves into the grist hopper where it is stored before being "mashed".

Describe the filling process
Water is added to the new make spirit to dilute the ABV. The new make spirit is then moved from the still house to the filling store. the ABV down to 63.5% from 70%. Once diluted the before putting into a barrel for maturation.
