Water Molecule
Polar molecule formed by covalent bonds between an oxygen atom and two hydrogen atoms.
Cohesion
Binding together of two molecules of the same type.
Adhesion
The ability of a substance to stick to an unlike substance.
eg. Hydrogen bonds can form between water and other polar molecules causing water to stick to them.
Hydrogen Bond
Attractive force between the hydrogen attached to an electronegative atom of one molecule and an electronegative atom of a different molecule.
Solvent
A liquid in which substances (or solutes) are dissolved forming a solution.
Covalent bonds
The electrons of the bond are shared between the two atoms, though not necessarily evenly.
Ionic bonds
The electrons are transferred from one atom to another and the bond is just the electrical attraction of opposite charges. The atoms become ions, which carry a nonzero charge (though the charges typically add up to zero).
Polar bonds
A covalent bond in which the electrons are shared so unevenly that one atoms has a partial positive charge and the other a partial negative charge.
Hydrophilic Substances
Substances which are chemically attracted to water and dissolve in water.
Hydrophobic Substances
Substances which are not water loving and are insoluble in water.
eg. all lipids including fats and oils.
surface tension
A measure of how difficult it is to stretch or break the surface of a liquid
capillary action
tendency of water to rise in a thin tube
high specific heat
A property of water. Water can absorb lots of heat before changing temperature
latent heat of vaporization
The energy required to convert liquid water to vapor
