Three types of lipids are found in foods and in body cells and tissues:
Triglycerides, Phospholipids, and sterols.
Triglycerides
Contain three fatty acid molecules and one glycerol molecules. Fatty acids are long chains of carbon atoms bound to each other as well as to hydrogen atoms, and glycerol is a 3-carbon alcohol that is the backbone of this.
Fatty acids are classified by:
Length of their chain, level of saturation, and shape.
Triglyceride: Chain Length
Short, medium, or long-chian of fatty acids. Determines lipid digestion, absorption, and metabolism, and use.
