The water in the barrel has a greater specific heat capacity than the air in the cellar. The barrel of water is able then to store more thermal energy than the air. When the temperature of the surrounding air drops, there is a temperature difference between the water and the air and heat flows from the barrel into the surrounding environment, reducing the change in temperature, that is reducing the decrease in the temperature of the air and the fruit and preventing them from dropping to freezing temperature.
