We observe the motion of stars in the galactic bulge to deduct the mass of its centre. Black holes do not just suck stars through the event horizon. We know that there is a very long way before matter falls into a black hole.

The trajectory of star S2 has been used to determine the mass of our galaxy. This star orbits close enough to the Sgr A*, a supermassive black hole.
